Cookware is an essential requirement of any kitchen. Types of materials used for making cookwares include aluminum, copper, glass, melamine, plastic, stainless steel, tinned steel, etc. Stainless steel kitchenware is very popular nowadays. Each material has its own advantages and disadvantages as a cooking utensil.
- Aluminum cookware is fairly inexpensive. Aluminum is strong, lightweight and is a good conductor of heat.
Advantages
excellent heat conductor
relatively light in weight
Disadvantages
porous and relatively soft
dents and scratches easily
difficult to clean
stains easily
reacts to food
oxidizes to a dull gray color
warps easily
requires a "nonstick" coating
- Clay cookwares are the traditional kitchenware made from the abundant clay of the earth.
- Copper cookware is still the preferred choice by many of the world's professional chefs and food lovers. Copper's uniform heat conductivity makes it a good material for top-of-range cooking because the heat is distributed evenly.
Advantages
excellent heat conductor
Disadvantages
relatively high cost
reacts to food (toxic with some foods)
oxidizes, very difficult to maintain finish
dents and scratches easily
must be lined with tin, nickel, or stainless steel
- Glass cookware is identified as heat resistant or non heat resistant.
- Plastic cookwares are used for serving and microwave cooking.
- Plated cookwares are aluminum or stainless steel cookwares plated with a layer of chrome, copper, or brass.
- Stainless steel cookwares are smooth, hard, warp and scratch resistant. The major alloys in stainless steel are chromium and nickel. The chromium provides rust and corrosion resistance and durability.
Advantages
extremely durable
non porous, extremely hard
smooth surface, easy to clean
dent and scratch resistant
does not react to foods
easy to maintain mirror finish
Disadvantages
poor heat conductor
- Stone cookwares are the most promising cookwares. They are unbreakable and easy to clean.
- Tinned steel cookwares are widely used for baking purposes. They are used in microwave ovens but for a short period of time.
- Silicone Cookware is Europe's newest, hot technology for the kitchen. It is made of a flexible and bendable silicone material.
